Summer Salads with a Sweet Twist
Summer is all about eating delicious, seasonal, fresh ingredients and what better way to do that than in a salad. From late spring with healthy platefuls of asparagus or watercress, through the balmy days of July and August, into early autumn, nature’s larder provides a raft of seasonal ingredients that add flavour and texture.
But one ingredient can consistently inject a healthy, sweet twist to any salad, elevating it from potentially just something on the side to the main attraction – honey.

Honey Heaven Cobb Salad
Serves 2
Ingredients
- 2 heads of Little Gem lettuce
- 1–2 chicken breasts, marinated with:
- 1 tsp whole grain mustard
- 2 tbsp Honey Heaven Organic Acacia Honey
- Salt and pepper
- 4 strips of low-fat bacon
- A handful of feta cheese, crumbled
- 2 hard-boiled eggs
- 10–15 cherry tomatoes, halved
- 1 ripe avocado, diced
Honey Mustard Dressing
- 1–2 tbsp whole grain mustard (to taste)
- 1 tbsp Acacia honey
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- Pinch of salt
Method
- Preheat the air fryer to 180°C and cook the marinated chicken breast for 13 minutes, or until fully cooked.
- Grill the bacon until crisp, then chop into small pieces.
- Boil the eggs until hard, then peel and slice.
- Prepare the vegetables: slice the lettuce, halve the cherry tomatoes, and cube the avocado.
- To assemble the salad, create a base layer with the lettuce, top with the tomatoes, bacon, sliced chicken, eggs, avocado, and crumbled feta.
- Whisk together all dressing ingredients and drizzle over the salad before serving.
Hot Honey Halloumi Salad with Mango, Corn & Cucumber
Serves 2–3
Ingredients
- 1 block of halloumi cheese
- 6 baby cucumbers, thinly sliced
- 1 ripe mango, cubed
- A handful of fresh coriander and mint, chopped
- 2 ears of corn on the cob
- Honey Heaven Organic Hot Honey scotch bonnet infused (to taste)
- Juice of 1 lemon
- Salt, to taste
Method
- Slice the halloumi and grill it in a hot pan until golden on both sides. Drizzle with Honey Heaven Hot Honey while still warm. Set aside.
- Remove the corn kernels from the cobs and grill them in the same pan until slightly charred.
- Prepare the salad ingredients: cube the mango, slice the cucumbers, and finely chop the coriander and mint.
- In a large bowl, combine the grilled corn, mango, cucumbers and herbs.
- Squeeze in the lemon juice, season with salt, and add a little extra Hot Honey to taste.
- Gently toss everything together, then top with the grilled halloumi. Serve immediately.

Grilled Peach, Tomato & Burrata Salad with Honeycomb and Basil
Ingredients
- 3 ripe peaches
- 1 large beefsteak tomato
- 1 ball of burrata
- 1 slice of Honey Heaven Organic Acacia Honeycomb
- Fresh basil leaves
Method
- Slice the peaches into wedges. Heat a grill pan over high heat and grill the peach slices until charred grill marks appear and the fruit begins to caramelize, about 2–3 minutes per side.
- Cut the tomato into thick slices.
- Arrange the grilled peaches and tomato slices on a serving plate. Tear the burrata gently and place it over the fruit.
- Add a slice of Honey Heaven honeycomb on top or to the side, and scatter fresh basil leaves for a fragrant finish.
- Optional: Drizzle with a little olive oil or balsamic glaze if desired.

CBD Honey Super Salad
Serves 2
Ingredients
- 2 sweet potatoes
- 2 cooked beetroots
- 120g of rocket
- 130g of cooked quinoa
Dressing
- 1/4 cup Dijon mustard
- 3 tbsp yoghurt or mayonnaise
- 3 tbsp of Honey Heaven CBD honey
Toppings
- Handful of walnuts or almonds
- Handful of cranberries
- Handful of pumpkin seeds
- Handful of edamame beans
- Pomegranate seeds
- Pear slices (optional)
Method
- Mix all the ingredients for the dressing and set aside.
- Chop the sweet potatoes and beetroot, put on a tray, drizzle with olive oil and salt. Bake for 30 min at 180C. Allow to cool.
- Assemble salad by mixing rocket and quinoa, layer on a big dish and add sweet potatoes, beetroot, all the toppings you’re using and finish with a drizzle of dressing.
